When Stu and I were dating, he told me that he had never eaten a mango. “Excuse me? What was that? I think I heard you incorrectly…It sounded like you said you have NEVER eaten a mango?” I later realized that a lot of people in the Midwest did not eat mangoes. This was shocking to me, but after trying most of the ones sold here-even in season- I understood why. I haven’t had great luck buying mangoes this far north. They lack all the color, sweetness, and smell of the fruit I remember as a kid. I came up with this relish as a way to disguise some of the Midwest mangoes’ shortcomings and still enjoy their milder flavor.
This relish is summer in a bowl. Really, it should be served with chips and a cocktail on the beach in some tropical place. Since an exotic vacation is nowhere in my near future, I might have to make this little relish frequently and let my taste buds do the traveling for me.
